The final countdown



My girls are getting quite excited about the fact that there are only a few more days until Christmas.  Tonight as they were doing their Advent calendars, Gillian told me that there were only two more days until Christmas.  When I pointed out that there were actually three more days, she simply replied, "Yes, but there are only Thursday and Wednesday left until Christmas Eve!"  Can't really argue with that. =)  

Gillian is at a great age for Christmas this year.  It reminds me of the year that Brianna was almost four (at least I think that's right).  Any time that someone asked her what Santa was going to bring or what she wanted for Christmas, her answer was the same, "Cinderella chapstick."  Gillian has only consistently mentioned one thing on her list--"the last monkey Pillow Pet."  Why the last one?  We've only seen one in the store, and for some reason G is convinced that it's the only one left and that it has to be hers.  Who can really understand the 4yo mind? =)  Last week we were in the car after I picked her up from daycare and I was trying to find out some more details about what she wanted for Christmas.  Of course she brought up the pillow pet, but I asked her if there was anything else that she wanted Santa to bring her.  She sat there for a minute, obviously giving a lot of thought to her answer.  Then she replied, very matter-of-factly, "Well....I think I will ask Santa Claus to bring me a big sister who isn't mean to me."  For the record, I did manage to contain my laughter enough that I didn't run the car off the road...


We finally got around to sending letters to Santa on Sunday morning.  The year that Brianna was obsessing about the Cinderella chapstick was also the first year I asked her if she wanted to write a letter to Santa.  Her answer? "No, Mommy. We need to send him an email!" I did some looking online, and found northpole.com.  We still go there every year to send letters.  The other thing we did on Sunday morning was make the latest Tuesdays with Dorie recipe for breakfast.  Jill of Jill's blog picked Cardamom Crumb Cake for us to bake this week.  Crumb cake is always a hit around here, and B & G love to help me make stuff.

I made a few changes, but mostly stuck with the recipe.  I didn't want to mess with making coffee, so I used some brewed tea instead.  I simply left out the espresso powder.  I was going to leave out the nuts in the crumb topping as well, but Gillian suggested that I use cashews since she likes those.  I used the zest from a satsuma (kind of like a tangerine) since that's what we have on hand for packed lunches.  The girls enjoyed helping me make this recipe--Gillian did a fine job rubbing the zest and sugar together.  Then she stirred dry ingredients together.  Brianna got to get her hands dirty, too, making the crumb mixture, and she got to crack the eggs.  They both helped put the crumb mixture on top of the cake batter.  


The verdict?  This one went over reasonably well with everyone here.  I'll probably skip the nuts entirely next time, since even though Gillian suggested the cashews, she said she didn't like them on the cake after all.  I think that's more because Brianna didn't like them than anything else.  So what else is new...  I thought they went well with the flavors in the cake.  The orange and cardamom were good together, too.  My cake seemed kind of sweet, a result of leaving out the espresso powder, I'm guessing.  I might try the cake again, with the coffee.  I'd like to try making it with different spices, too.

12 Days of Cookies - Day 7 - Pecan Lace Sandwiches with Orange Buttercream





Welcome to Day 7 of the 12 Days of Cookies, in which our fearless heroine (that's me =P ) learns several valuable lessons.  Yes, Day 7 was supposed to be yesterday.  And no, yesterday did not go well...

You'd think I would have learned by now.  Baking when tired and in a really bad mood never ends well.  *sigh*  And yet, I tried to do it anyway.  Because I was trying to stay on schedule.  So that's one lesson--sometimes it's better just to go to bed and deal with stuff in the morning.  Otherwise, you end up with "lace" cookies that look like this:



And that's one of the good ones.  Lol. =)  So after some sleep, I took another look at things.  And decided to try making these cookies again.  Next lesson learned--apparently, when baking in a bad mood, precise measuring goes out the window.  I'm pretty sure that for last night's batch, I managed to use too little corn syrup (that's what I get for eyeballing it), too many nuts (didn't think throwing in those last few from the bottom of the container would make that much difference), and too much flour (did dip & sweep instead of weighing, which I almost never do).  So combine all those and what do you get?  If you said a sort of dry, crumbly dough, you win!  Now I haven't made lace cookies before, but as an experienced baker, I should have realized that something was wrong.  Okay, to be honest, I did suspect that something was wrong, but I kept going anyway.  Not the brightest thing I've ever done.  After proper measuring, my dough/batter looked much better, and resulted in cookies that look like this:



Now that looks like a lace cookie!

I did make a couple small changes to the recipe.  I added a big pinch of kosher salt to the cookie dough/batter.  Most of the cookies I left flat, but I did try putting a few on my rolling pin to get tuiles.  Pretty cool.  For the filling, I made a few sandwiches with melted chocolate, just for the heck of it.  For the buttercream, I used zest and juice from a satsuma since that's what I had in the fridge.  I also added a pinch of salt to the buttercream.



The verdict?  These are really tasty!  I love the lacey texture of the cookies--very pretty.  And the buttercream is delicious.  The two together are a bit sweet, but the salt I added definitely helps with that.  I haven't had a chance to get any other opinions, so I'll have to get back to you with what the rest of the family thinks.  Now that I've figured out what I did wrong the first time, I'll definitely be making these again.

12 Days of Cookies - Day 6 - Ginger-Orange Stars




Wow.  I've just about made it to the half-way mark.  I'm sitting here trying to decide how I feel about how it's going.  So far, I've managed to post every day.  That's a pretty good accomplishment.  But I thought I was going to be able to get and stay farther ahead, and that just hasn't happened.  Funny how that works, with a full-time job and two kids. =)  As I mentioned, I had to work yesterday, but I prepped dough to bake in the evening.  For today, I figured I'd be able to get a couple new cookies made, no problem, since I was home all day.  And maybe bake some bread and other stuff as well.  Wishful thinking on my part.  I neglected to take into account the time I was going to spend grocery shopping, for one thing.  And then there's my part-time (verging on full-time) job as referee...  *sigh*  And I've barely gotten started on the Christmas decorating.  I'm looking at a totally naked Christmas tree in my living room right now. =)  But hey, at least the girls picked up their toys and my husband vacuumed the living room so I could actually put the tree there.  And I did get a nap, which I desperately needed.

So this is going to be kind of short so I can get to bed.  For today's cookie, I made the Ginger-Orange Stars.  They're another roll-out sort of cookie.  For all of these that I've made, I've only baked a portion of the dough, so my freezer is getting quite well-stocked.  This will come in handy in a couple weeks, since I'm on vacation the week of the 21st.  I'll be able to bake fresh cookies to give away as gifts.  This one is the smallest batch that I've baked, though, since I only made a handful of cookies so I could get some pictures.



At first glance, the ingredient list is similar to that of the Spiced Roll-out Cookies that I made on Day 1.  But there are some differences.  The recipe calls for dark molasses instead of mild, which contributes a stronger flavor.  It also has only an egg yolk, rather than a whole egg.  There's plenty of ginger, and I just  got some new powdered ginger, so it's pretty strong.  And there's orange zest--I used a satsuma, since that's what I had.  I chilled the dough for about 8 hours, but it still had a little give to it when I took it out to cut off a piece to roll out.  I quickly cut out some stars, transferred them to a baking sheet, then chilled them for about 5 minutes before baking.  I baked the cookies for 10 minutes at 350 degrees F.  After letting the cookies cool a bit, I decorated them with icing made from powdered sugar, a bit of water and a couple drops of orange oil.

The verdict?  Again, I'm still trying to decide.  They're more of a ginger snap--they have a crisp texture.  The molasses flavor is quite strong, as is the ginger, but I can't really taste the orange in the cookies.   Even with the bit of orange in the icing, it was hard to detect.  Maybe I didn't use enough zest; I didn't measure it all that carefully.  I'm going to bake more of these so I can sample them again.  If I make these again, I think I'd like to try them with mild molasses so maybe the orange flavor will be more prominent.
