Maybe later...

This week's Tuesdays with Dorie recipe was chosen by Rebecca of Ezra Pound Cake.  She selected Savory Corn and Pepper Muffins for us to make.  I still haven't made the muffins, and can't decide if I'm going to.  If I get to them this evening, I'll definitely make some changes to the recipe.  I don't like jalapenos and cilantro, and can't eat bell peppers.  I was thinking that cheddar cheese and some scallions would make for a tasty (and still savory) muffin.

In the meantime, be sure to head over to Tuesdays with Dorie to check out the blogroll and see how others fared with this one.  We have a bunch of new members, too!  And visit Rebecca's blog for the recipe if you'd like to give these muffins a try.

  1. Make them, make them, make them.

    They are fabulous.

I left out a lot of the heat, and they were great.

  4. I think they would be great with the cheese and the scallions, Di. And someone suggested bacon, too. Yum! Good luck.

  9. I didn't use bell pepper but did add some canned green chiles. And I used scallions which were great. The cheese would also be good. I say "make 'em!"

  12. I made the corniest corn muffins by mistake, which are basically like these but without all the hot stuff. We liked them, so you might want to give those a shot.

  15. I'm with those that said "make them!" They really are good. And I think you could adapt them easily. Cheese and scallions would be excellent. I think bacon or ham might work, too.
